Recipe: Shakshuka

Created by MasterChef 2016 quarterfinalist, Chris Hale, exclusively for IconInc, this delicious dish will set you up for the day at breakfast time or make a speedy dinner for an evening on the go.

Serves 1

(but if you want to cook with friends in the mega kitchen, just multiply the amounts)

Ingredients:

  • 1 tbsp vegetable oil
  • 1/2 onion, finely sliced
  • 1 red pepper, finely chopped
  • A pinch of sugar
  • 1/2 tsp cumin
  • 2 tbsp chopped coriander, plus extra to garnish
  • A pinch of chilli flakes
  • 1 tin of chopped tomatoes
  • 2 free-range eggs
  • Bread to serve

Method:

  1. Set the hob on a medium-low heat and add the oil to your pan. Once the oil is warmed up, add the peppers and onions and sauté for 3 mins.
  2. Next, add the sugar, spices and herbs, and continue cooking on a medium heat for 1 min.
  3. Then stir in the chopped tomatoes, and season with some salt and pepper.
  4. Reduce the heat to low and simmer the sauce for 15 mins.
  5. Now make two gaps in the sauce and carefully break an egg into each gap. Sprinkle with salt and cover the pan with a lid.
  6. Cook on a gentle heat for 10 mins, until the eggs are just set.
