This recipe was a spontaneous creation of mine and, luckily, a successful one. What I love about it is how simple and fast it is. You literally just chuck everything in a blender! It’s a healthy alternative that fills you up in the morning without spiking your blood sugar, meaning that you won’t be craving more sugary stuff later on in the day.' - Elena, The Ascent
Ingredients
• 5 tbsp of oats
• 1 egg
• 1 ripe banana
• A handful of mixed berries
• 2 tbsp of olive oil
Method
1. Blend together the oats, egg, banana and berries. 2. Warm the oil in a frying pan and add the mixture in small amounts to create American style pancakes. 3. Fry until the pancakes are golden.
